Regardless of which version you prefer, Bianco DiNapoli tomatoes are the ultimate elevation for your menu. They are the official tomatoes of Pizzeria Bianco, a collaboration between award-winning pizza chef Chris Bianco and Rob DiNapoli.
Chris Bianco had specific ideas for the perfect tomato, inspired by his Italian heritage but made organically in California. Rob DiNapoli had the experience and expertise to produce exactly what Bianco was looking for, and thus the Bianco DiNapoli line was born.
After harvesting, the tomatoes are transported by water into a sorter to maintain their integrity and avoid crushing. They are then separated by size and inspected for damage. Crushed tomatoes are used for tomato paste and ketchup, while the intact ones are steam-peeled and canned.
Each can is hermetically sealed in a BPA-free container, with organic heat-treated puree added. The tomatoes have a very thick consistency, and nothing goes to waste. The only preservative used is a small amount of citric acid, a natural antimicrobial agent. These tomatoes are not treated with pesticides or other chemicals.
Rob DiNapoli, whose family has been in the canning and packing business since 1938, is the mastermind behind the logistics and science of the tomato business. He has transitioned the company from packing for other brands to focusing on their own high-end foodservice and retail lines.
Initially, Chris Bianco's idea was to have just plain tomatoes, but after thousands of taste tests, a small amount of salt and a few basil leaves were added to enhance the flavor of the harvest. The whole tomatoes in the yellow label are in a thick puree and have a perfect texture, while the crushed blue label product is the same tomatoes, just pre-crushed. The fire-roasted version is the whole tomatoes roasted and then crushed, creating a unique flavor profile.
